<li>​scaglie di parmigiano reggiano 30 g</li>
<li>​olio extravergine d&#8217;oliva delicato</li>
<li>​succo di limone</li>
<li>​pepe nero fresco</li>

<h3>​PROCEDIMENTO</h3>
<p dir="ltr">​Disponi le fette di lomo su un piatto piano lasciandole riposare a temperatura ambiente finché il grasso non diventa traslucido. Poi pulisci i carciofi eliminando le foglie dure e affettali finemente con una mandolina immergendoli subito in acqua e limone. Quindi asciugali e adagiali sopra il lomo aggiungendo le scaglie di parmigiano e le mandorle tostate. Infine condisci con un filo d&#8217;olio e una macinata di pepe senza aggiungere sale per non coprire il sapore naturale del salume.</p>
