<p><span><i>Anche questa preparazione riafferma, con forza, che la stessa ricetta viene rielaborata nelle diverse parti della Regione anche, a volte, mantenendo lo stesso nome.&nbsp;</i></span></p>
<p><span><i>Infatti, le SARDE A BECCAFICO palermitane, sono diverse sia nella forma che nel tipo di ingredienti e cottura.</i></span></p>

<p><b><span>Ingredienti per 4 persone:</span></b></p>
<p><span>- 1\2 kg sarde già eviscerate e diliscate accuratamente</span></p>
<p><span>- 3 uova + 3 per la panatura</span></p>
<p><span>- 3 cucchiai di pangrattato</span></p>
<p><span>- 5 cucchiai di farina di semola rimacinata</span></p>
<p><span>- 3 cucchiai di pecorino o altro formaggio a vostra scelta</span></p>
<p><span>- 1 cucchiaio di prezzemolo fresco tritato</span></p>
<p><span>- 1 cucchiaio di menta fresca tritata</span></p>
<p><span>- pizzico di sale</span></p>
<p><span>- 1 cucchiaio di aceto</span></p>

<p><b><span>procedimento:</span></b></p>
<p><span>- dopo aver pulito accuratamente le sarde (potete comprarle già pulite dal vostro pescivendolo), tenerle a bagno in acqua e aceto per 5 minuti</span></p>
<p><span>- sciacquare accuratamente</span></p>
<p><span>- in una ciotola mescolare 3 uova con il formaggio, pangrattato, menta, prezzemolo, sale sino ad ottenere un composto consistente. Se necessario, aggiungere un altro poco di pangrattato</span></p>
<p><span>- aprire le sarde sfilettate, mettere un cucchiaio del composto, sovrapporre un&#8217;altra sarda e mettere da parte sino ad esaurimento degli ingredienti</span></p>
<p><span>- in un altra ciotola battere le altre 3 uova&nbsp;</span></p>
<p><span>- passare le sarde così farcite nelle uova sbattute e nella farina di semola</span></p>
<p><span>- friggere in abbondante olio di semi</span></p>
<p><span>- porre le sarde fritte su un foglio di carta per fritti</span></p>
<p><span>- servire calde</span></p>
