<p><span>Da quando ho la pentola a pressione, il brodo di carne lo preparo in meno di 1 ora, per la precisione in 45 minuti, come in questa ricetta, ma nel caso di brodo di pollo, anche in 30 minuti.&nbsp;</span><br /><span>Questa è la ricetta per il classico brodo con carne di manzo e di pollo, carote, sedano, cipolla e prezzemolo. A fine cottura, ho messo da parte la carne come secondo, ho filtrato il brodo e ci ho tuffato i tortellini.&nbsp;</span><br /><span><br /></span>
<div><span>INGREDIENTI per 4:&nbsp;</span></div>
<div></div>
<ul>
<li><span>550 grammi di polpa di bovino aduto&nbsp;</span></li>
<li><span>700 grammi di muscolo di bovino con osso&nbsp;</span></li>
<li><span>1 coscia di pollo&nbsp;</span></li>
<li><span>1 coscia di tacchino</span></li>
<li><span>1 mazzo di prezzemolo&nbsp;</span></li>
<li><span>2 coste di sedano&nbsp;</span></li>
<li><span>2 carote</span></li>
<li><span>1 cipolla</span></li>
<li><span>1 cucchiaio di sale grosso</span></li>
</ul>
<div><span>Porre in pentola a pressione la cipolla, le carote, il sedano, la carne e il prezzemolo, coprire di acqua &nbsp;fino al limite indicato nella pentola. &nbsp;Aggiungere il sale grosso, chiudere la pentola, posizionare il livello di potenza 2, ed impostare il timer su 45 minuti.&nbsp;</span></div>
<div><span>In caso di carne congelata impostare 50 minuti.&nbsp;</span></div>
<div><span>Estrarre la carne, filtrare il brodo e tuffare i tortellini nel brodo bollente.&nbsp;</span></div>

<li><span>200 grammi di avena decorticata</span></li>
<li><span>1 spicchio di aglio</span></li>
<li><span>1cipolla</span></li>
<li><span>1 carota</span></li>
<li><span>1 costa di sedano</span></li>
<li><span>Peperoncino</span></li>
<li><span>100 grammi di pancetta affumicata o di speck a dadini</span></li>
<li><span>Rosmarino</span></li>
<li><span>Salvia</span></li>
<li><span>Sale</span></li>
<li><span>Brodo 1 litro e mezzo</span></li>
<li><span>olio</span></li>
</ul>
<p>

<div><span>&nbsp;Soffriggere nell&#8217;olio la cipolla con la&nbsp;</span><span>carota, il sedano, l&#8217;aglio, il rosmarino il peperoncino, la salvia tritati e la pancetta per alcuni minuti, poi</span><span>&nbsp;aggiungere i fagioli e coprire con 750 cc di brodo. Chiudere la pentola a pressione e cuocere per 40 minuti sulla posizione 2, quindi aprire la pentola e aggiungere l’avena decorticata e il brodo rimasto, chiudere la pentola &nbsp;e cuocere per ulteriori</span><span>&nbsp; </span><span>40 minuti.&nbsp;</span></div>
<div><span>Servire con un filo di olio e se piace del parmigiano.</span></div>

<p><span>Questo è uno dei miei secondi preferiti, un semplice e veloce spezzatino in salsa di cipolle, che grazie all&#8217;uso della pentola a pressione si prepara in appena 20 minuti.&nbsp;</span><br /><span><br /></span>

<li><span>400 grammi di spezzatino di vitello</span></li>
<li><span>6 cipolle piccole</span></li>
<li><span>Olio</span></li>
<li><span>Sale e pepe</span></li>
<li><span>1 bicchiere di Vino bianco</span></li>
<li><span>Brodo circa 300 ml&nbsp;</span></li>
<li><span>2 cucchiai di capperi</span></li>

<div><span>Soffriggere le cipolle tagliate grossolanamente&nbsp;nell&#8217;olio, poi aggiungere la&nbsp;carne e rosolarla per 2 minuti rigirandola. Salare e pepare, poi bagnare con il vino, e &nbsp;una volta evaporato coprire con del brodo, chiudere la pentola, impostare il livello di potenza sul &nbsp;2 e impostare il timer sui 15 minuti. Aprire la pentola, aggiungere i capperi &nbsp;e lasciare addensare la salsa alle cipolle.&nbsp;</span></div>
