Anelli di carne

In cucina non sono ammessi gli sprechi! Questo è il principio in cui credo fortemente, e tu? Perciò se mi dovesse avanzare del bollito o dell’arrosto, la domanda è sempre la stessa: come riesco a valorizzarlo e farlo apprezzare ai miei commensali?
Ecco una ricettina veloce e gustosa, che posso raccomandarti per far in modo che spariscano gli “avanzi” in un istante: gli anelli di carne. Scopriamola assieme…

Ingredienti*:


300 g di arrosto di carne 
una patata bollita di medie dimensioni
un pezzo di salsiccia sarda stagionata
parmigiano grattugiato quanto basta
un uovo
uno spicchio d'aglio
un cucchiaio di prezzemolo trittato
noce moscata quanto basta
sale e pepe quanto basta
pane grattugiato grossolanamente
olio extravergine d'oliva

In una ciotola schiacciare la patata con una forchetta e condire con sale e pepe. Inserire nel mixer la polpa di arrosto avanzato già tagliato a pezzi con la salsiccia, il parmigiano, l'aglio ed il prezzemolo, una grattugiata di noce moscata e di pepe, e lasciare tritare il tutto fino ad ottenere un composto malleabile.
Trasferire il tutto nella ciotola con la patata schiacciata, aggiungere l'uovo, mescolare e amalgamare. Formare con le mani, una polpetta, schiacciare e formare un buco al centro. Panare l'anello di carne e friggere in abbondante olio caldo.
 Scolare gli anelli dall’eventuale eccesso d’olio, e servire caldi.
Accompagnare a piacere con una salsina di pomodoro al basilico fresco e un’invitante insalatina mista.

*Come noterai il dosaggio degli ingredienti è approssimato per circa 300 g di carne. Ciò significa che dovrai adattare i quantitativi sia in base al peso della polpa di carne che ti è avanzata, sia in base ai tuoi gusti.

Ingredients*:


300 g of roast meat
a boiled potato of medium size
a piece of seasoned Sarda sausage
grated parmigiano cheese to taste
an egg
a clove of garlic
a tablespoonful of chopped parsley
nutmeg to taste
Salt and pepper to taste
grated breadcrumbs
extra virgin olive oil

Mash the potato with a fork and season with salt and pepper in a bowl. Insert the advanced roast already cut into pieces with the sausage, the parmigiano cheese, the garlic, the parsley, the grated nutmeg and the pepper into the mixer, and let grind everything until you get a malleable mixture.
Transfer the everything into the bowl with the crushed potato, add the egg, mix very well. Form with your hands, a meatball, crush it and form a hole in the center. To bread the ring of meat and fry in plenty of hot oil.
Drain the rings from the oil and serve them warm. Accompany with a tomato sauce with fresh basil and an inviting mixed salad.

*As you will notice, the dosage of the ingredients is approximate for about 300 g of meat. This means that you will need to adjust the quantities according to the weight of the lean meat you have advanced, and according to your taste.
